  • Mexican Migas With Lime Crema

    "You've never had scramble eggs like this before"


    Our partnership with Vitamix has encouraged us to try out new recipes. Throughout the year we’ve made everything from smoothies, sorbets, and dips. This month, we’re livening up our morning breakfast by making Migas, a Mexican dish that combines fried tortilla chips and scrambled eggs together. It’s then topped with a savoury Lime Crema that can be easily made with the help of Vitamix’s Explorian blender.

    To make the Lime Crema, you’ll need sour cream, mayo, a pinch of salt, a clove of garlic and a splash of water. First, you need to set your Explorian to start at Variable 1 speed and slowly turn the knob to the fastest settings. This ensure that all the ingredients blend in perfectly. After a few seconds, taste the Crema. If it’s too thick, add water, if it’s too watery, add a little more sour cream. An important thing to note is to not add too much salt!

    You can also use the lime crema for other dishes like fish tacos, roasted potatoes, and soups.

    Heat olive oil and butter in a large skillet over medium heat. Add the tortillas to fry, stirring frequently, until crispy and golden brown.

    Turn down the heat and add the jalapeño, garlic and onions. Allow them to sauté for two minutes and then add the eggs. Immediately starting moving the eggs around gently in the pan to make sure the ingredients blend together nicely. As soon as the eggs are near cooked add your salt, pepper, and cajun spice.

    Remove from the migas from stove (the eggs will finish cooking from the heat of the pan) and stir in the cheese and cilantro. After plating the migas, be sure to top the dish with your lime crema! It can also be served with ripe avocado, refried black beans, and hot sauce.

    Migas

    2 small tortillas (Sliced into strips)
    Handful of cilantro (Finely chopped)
    ½ cup of pepper jack cheese
    jalapeños (Diced)
    ½ onion (Diced)
    2 cloves garlic (Diced)
    ½ teaspoon of salt and pepper
    ½ teaspoon of cajun spice
    A splash of milk
    6 eggs


    Lime Crema

    1 cup of sour cream
    1 cup of mayo
    1 teaspoon of lime juice or freshly squeezed lime
    1 clove of garlic
    A pinch of salt

    Blend all Lime Crema ingredients in your Vitamix Explorian machine.
