  • How Do You FIOL

    "FIOL is not just a drink, it embraces the whole Italian culture and way of living which is deeply rooted in the land of wines."


    In 2010, three childhood friends from Treviso, Italy came together to create their own prosecco. The result is FIOL, a crisp sparkling wine that is light on the bubbles with a touch of sweet floral notes.  

    The founders, Gian Luca Passi de Preposulo, Pietro and Giovanni Ciani Bassetti have been connected to wine making their entire lives. As children they would help their fathers harvest the grapes that would later become wine.

    As a young brand, FIOL injects a youthfulness into the world of prosecco. This is exemplified by the use of the sparkling wine as a main ingredient to be used for mixology, by the sleek dark green maximilian bottle, and FIOL’s minimalistic logo.

    We joined FIOL at the Henden speakeasy in Montreal to receive a proper introduction to their sparkling wine. The evening was spent tasting delightful cocktails and bites that celebrated the spirit of FIOL.

    FIOL Berry

    0.5 oz Dolin Dry Vermouth
    0.5 oz Almond Orgeat
    0.5 oz Lemon Juice
    3 muddled Blackberries
    3 Mint Leaves

    Shake ingredients with ice, then strain in a coupe glass. Top with FIOL. Garnish with 2 blackberries.

    FIOL Cup

    0.5oz of Dolin White Vermouth
    0.5 oz of Rouge Gorge Vermouth de Cidre
    0.5oz Vermut Lacuesta (Rojo)
    0.25 oz Cynar
    0.25 oz Campari
    0.5 Lemon Juice

    Shake ingredients with ice, then strain into a coupe glass. Add a splash of Ginger Ale and top with 2 oz of FIOL. Garnish with cucumber and mint.

    FIOL Hibiscus

    0.5 oz Gin
    1 oz Hibiscus Syrup
    0.75 oz Pineapple Juice
    0.5 oz Lemon Juice
    3 Muddled Basil Leaves

    Shake ingredients with ice, the strain into a flute glass and top with FIOL. Garnish with sliced strawberries.
