At our arrival to Toronto’s Billy Bishop Toronto City Airport, we were ushered into a black Town car, and driven to the Thompson hotel, which would be our accommodations for the next two nights. The hotel lobby was dimly lit and electronic music played from the speakers. Behind reception, an abstract outline of the city of Toronto was laid out against the black wall. The kindly receptionist handed us our black room cards and pointed us to the elevators. The head chef Jacob used to be Chris Bosh’s personal cook. cheese, and raw bread that have been cooked in a dehydrator. Next, we were served a tasty morcilla that was served with a sprinkle of hazelnut, kombucha mustard and finished off with a delectable pear slice. Lastly, our appetizer course ended with an amazingly good mugi miso soup.
For the main course, we enjoyed a large steelhead trout topped with kinome and house-grown pea shoots. The fish was served with sprouted ancient grains, cashew foie, rhubard and foraged greens. The fish was flaky and wonderfully moist, the greens tasty and complemented the fish nicely. Furthermore, we were spoiled with deep-fried Quebec quail that was accompanied with a side of confit potatoes and burnt chili mayo.
And then it was time for dessert.
Our first glance at the menu we did not take seeing candied insects being served to us in soil seriously – until we got to dessert. The insects were worms that had been specifically harvested for human consumption. When they were laid out at the counter everyone crowded around to see who would take the first bite and we being the adventurers that we are, took the first bite.
The worms were crunchy and the chocolate soil was flaky, when eaten together it was like having a crunchy chocolate dessert. It is an exhibition that explores the history of the sneaker from the 19th century through to today. We had the pleasure of getting a breakdown of the redesigned Weapon from Converse CONS Design Director, Chris Law. Lawintroduced the new collection, which is a compilation of five premium, lifestyle and skate sneakers. Converse has remastered and retooled the Cons Weapon for the 21st century. We were gifted with a premium edition of the Cons Weapon that is being limited to 200 pairs per colourway. We particularly appreciate how they have slimmed down its silhouette and used premium leather for the upper. As the shoe is subjected to more wear the leather becomes supple and gives off the sought after vintage aesthetic.
